Yep, those are driven off the holidays you select in the system.
Go to Settings > Holiday Lists and subscribe to some (and/or add your own custom holidays).

They are off by default for imported bookings, however looks like you did a batch update a couple weeks ago when updating some secdep settings which turned them back on.

That's a good idea... however, putting it into the name like you're doing will transfer over to OTA's while a custom field we add wouldn't.
